1 tablespoon Food Club Olive Oil

1 yellow onion, diced

2 large carrots, diced

2 stalks celery, diced

2 teaspoons kosher salt

1/2 teaspoon ground black pepper

6 cups chicken stock

3 cups shredded rotisserie chicken

1/4 cup chopped fresh parsley (plus more for serving)\

2 cans Food Club Cream of Chicken Soup

3 Cups Food Club Wild Rice
Directions:
- Add all ingredients to dutch oven. Cook for 2.5 hours or until rice is tender.
